It's just what we do.

Yesterday afternoon, one of my parent's dearest friends was killed in a car accident near his home.  That kinda put a damper on Easter dinner.  But my momma, being the strong Southern woman that she is, carried on & enjoyed dinner (lamb) before she went to attend to her friend. 

She & "My Annie" are such Marthas, they will be over there the whole time greeting visitors, recieving food & working in the kitchen.  Me, on the other hand (in case you haven't figured out yet) I am a Mary. I entertain, I don't clean.

Mr. Tim was a wonderful man; always performing random acts of kindness, often to those he didn't even know, providing Christmas for children that lost their mother, helping the needy.  He was very involved in & did so much for our church, as well as the community.  He was a businessman whose main focus was improving the area in which we live.  He was a very laid-back, soft-spoken man who preferred to work "behind the scenes".  Our whole community has suffered a great loss.

When Retro & I got married, he drove us in his antique car to our reception at my parent's home.  I can honestly say I have never heard him utter an unkind word to anyone. Mr. Tim was almost like a big teddy bear.

And being the good Southern lady that I am, I must fix something to take to the family.  My mother suggested a take one of my signature dishes (I have like 3) Chicken & Dumplings.  I'll share it with y'all because I'm sweet & all. 

Semi-Slacker Chicken & Dumplings  (kinda like Semi-Homemade)

1 whole cut-up fryer (I don't cut-up chicken, they sell it already done)
1 pkg. of chicken breasts or tenders (R likes extra meat)
1 pkg. of Mary B's frozen dumplings (in the freezer section)
2 cans of cream of chicken & mushroom soups (Campbell's)
1 can cream of chicken soup
2 boiled eggs, sliced (this is optional, but I've got like a dozen in the frig from Easter)

Boil all the chicken & debone (it's not that hard, if I can do it you can. Just let it cool down some, lesson learned) Add the cream soups & return to a boil. Mix well & add the dumplings (I break some in half.)  Add the sliced eggs & simmer on low, covered, for about 30 minutes.

Easy, peasy.

That is so sad about your friend. He sounded like a great man. You are so sweet to take chicken and dumplings over!

I'm so sorry about Mr. T.....but I think southern women rock....y'all know how to carry on the right way....the dumplings sound devine;)

I have a Great Uncle that sounds very similar to your Mr. Tim- and when I was little I used to eat dumpligs with him ... I've never made them for my family- maybbe I'll try your rec'P. I am sooo following you now! Hope you can stop by my place soon!

I am a big, huge freak when someone dies. All my southern roots go right out the window because I just can't handle grieving since my Daddy died. The good thing about it though is that now I'm excused because I have a good reason. I get the "you poor thing you don't even have to worry about it and we'll take care of it," which is nice.

Oh, I'm so sorry. Hearing something like this touches me deeply after what happened to my Dad a few weeks ago. Many prayers to the family!

I am sorry to hear that Mr. Tim passed away. I rode by the wreakage yesterday and knew that someone had to have gotten seriously hurt. I am always worried about that intersection.

Ok I know this sounds weird because it's not like when someone dies you would say, "Oh well they weren't very nice anyway," but why is it always the sweet kind people who are taken from us too soon?

BTW~ Who am I if I don't clean OR entertain?
