Tortilla Soup! It's delish! 5 ingredients... It's on my food blog -- just to go the labels and look for Tortilla Soup. I have a couple of Chicken soup ones on there too.

This is my hubs recipe... He's one of those people who just knows how to make it and doesn't use a recipe, yet it tastes the same every time...here you go...not sure that this is exactly how he does it...but
1 pound of bacon, cut into small pieces, render it in a stock pot until it's crispy. Remove the bacon and most of the fat. Leave a little fat in the pot, save the bacon bits to use as garnish for the soup.
In the stock pot, use that a little of the bacon fat to brown a chopped up onion, 1 diced red pepper until they are cooked... add flour to make a rue, cook that for a few minutes (the more rue, the thicker the soup will be, but don't go overboard)
Slowly add in chicken stock while stirring(probably 2 boxes of stock)(not chicken broth). Add a few full stalks of celery, leave the tops on...you will remove all of the celery later. Add a bay leaf. Let this cook for a while.
Add 1 and a half bags of frozen sweet corn, season with a little sugar, little nutmeg, pepper and salt to taste.
Let this simmer for a while...then add heavy cream...how much??? Not sure, a quart or less?
Be careful that you don't bring this back to a full boil now because the cream will break. Simmer it on low and stir it often. Remove the celery.
Servie with the pieces of bacon that you cooked on top along with a little sour cream and some good shredded cheddar cheese.
Here's a delicious and EASY ham and potato chowder (or you can make it with turkey or chicken...whatever meat you have on hand)!
1 box scalloped potatoes 1 c. diced ham 2 stalks diced celery pepper 1 diced onion 5 c. chicken broth Mix in crockpot and cook on low 7 hrs. 1/3 c. flour 2 c. half & half or milk Mix until smooth and add to crockpot. Stir until blended and cook on low for 1 more hr.
Eat and enjoy! I've also thrown fresh mushrooms and chopped carrots--both worked great.

It is definitely soup weather. That is for sure. We will be having a lot of soup this winter too. It always feels so good on cold days.
Here is one that is very good. Cheeseburger Chowder 1/2 pound ground beef 1 can cheddar cheese soup 1 3/4 cup mil 1 c. frozen shredded hash browns 1 TBSP taco seasoning 1 TBSP dried minced onion 1/2 tsp chili powder
Cook ground beef until no longer pink, drain. Stir in remaining ingredients until blended. Bring to a boil. Reduce heat, simmer uncovered 5 minutes. Top with crushed corn chips, cheese or green onions and it is yummy. This only yields 4 servings. I have to triple it for my family. LOL
I probably have a couple that are different from the delicious ones on here! I'll email them to you! I'd have to get off this sofa to do it right now, and, well, you understand! xoxo
