Semi-Slacker Domestication 101

Okay. Ya'll know my favorite place is not the kitchen, at least not working there. But when I was reorganizing my cookbook collection, I came across this recipe & we love it! It's quick & easy & fits in with my semi-slacker style!

Plus, I love a good baked potato cause I'm fat like that! And I am currently addicted to the LOADED potatoes from Wendy's.

Baked New Potatoes

12 unpeeled new potatoes, cooked & sliced (unpeeled, yes!)
1 cup (or more) shredded sharp Cheddar cheese (it comes in a bag)
2 slices of bacon, crisp-cooked, crumbled (of course, I use real bacon bits from the jar)
1 stick of butter, melted (hello. microwave.)
1 tsp. salt

Place the potato slices in a 9x13-inch baking dish. Cover with the cheese. Sprinkle with the bacon. Pour the butter over the top. Season with salt. Bake at 350 degrees for 10 minutes.
Yummy!

If I was smart, I'd think of how to add some more baked potato goodies to kick it up. I'm thinking sour cream, chives, broccoli, whatever! If any of you Betty Crocker's can help me, that would be awesome!

Thanks for all the advice regarding Sass's reading. We are having her tested for dyslexia. I'm hoping to receive the paperwork at the beginning of the week. Any advice on dealing with this would be greatly appreciated!

Potatoes used to be considered a diet food. I see no reason to stop believing that.

As far as the dyslexia. I found I was so relieved to finally get a diagnosis. It meant we could move forward. Just fight for your daughter in the ARD meeting, the school will try to only give the bare minimum because of money. If you say you want all services available and insist upon it, they will usually give in. It may take several meetings though. Just be her biggest adovcate!

If you need ARD advice let me know. I've gotten wonderful help to sit through them, and I'm be happy to pass the info on.

ARD = Admission Review and Dismissal Committee Meetings.

By the way, my son is not dyslexic, he has Asperger's. But I understand the frustration of something being wrong, and not knowing how to fix it. Hopefully she isn't dyslexic, but if she is I offer all resources I have!

Oh. My. Word. That sounds yummy!!!! I don't ever peel the potatoes when I cook them...that's where all the vitamins are (or so my grandma told me once!)

Yum. That sounds delish!!

My younger sis had/has dyslexia. It was tough for her for awhile but she eventually worked through it. If you want, I could hook you two up and I'm sure she could give you some great insight.

I've never posted before but..... My daughter was diagnosed w dyslexia last year. We are fortunate to have a teacher that is certified to teach a program specifically for dyslexic children in our school. It has been a godsend, however, we still have to work very HARD w her everyday. My husband is also dyslexic, when they didn't have a "diagnosis" for it, and he has a college degree and does wonderful!!! I see her struggle, but I also see her fight and fight hard to make it!!! It's amazing to see the diffence she has made in a year. Good Luck and hang in there!
