Because you asked...

As a rule, I don't really spend a lot of time in the kitchen. However, in the summer we have ALL these peaches & I have to do something with them. So I bake.

Here's a yummy recipe from my friend, Mark Ballard. Google him. He's a local celebrity & very creative!

Peach Custard Pie
1 unbaked 9" pie shell (use deep dish)
1 cup sugar
2 eggs, well beaten
1/4 teaspoon almond flavoring
4 large ripe peaches
1/3 cup plain flour
½ stick butter, melted

Preheat oven to 350 degrees. Peel & slice peaches & arrange them to cover the bottom of the pie crust with one layer. Mix the sugar & flour. Add the well beaten eggs, melted butter & flavoring, mixing well. Pour over the peaches. Bake until crust browns & custard thickens & sets. Time will range from 25-35 minutes depending on the oven.

Oh that sounds yummy. I am going to have to come back and print it! I actually made a peach cobbler tonight and it was super easy and soooooo good! I was impressed because I don't usually make desserts!

This is crazy..I made almost this exact pie last night, sans the almond flavoring. It was in one of my Denver Junior League cookbooks, Colorado Cache, I believe. It is yummy!
